Guilt-free Mini Pork & Mash

YOU WILL NEED

» 1 pork tenderloin, trimmed
» Zest and juice of 1 lime
» 5cm piece fresh root ginger, grated
» 2tbsp clear honey
» ½tsp allspice
» Small bunch of thyme, leaves picked
» 750g sweet potato, peeled and chopped into even chunks
» ½tsp chilli flakes
» 5 spring onions, finely sliced

WHAT TO DO

1 Heat the oven to 200°C, Gas 6. Put the pork in a freezer bag with the lime zest, juice, ginger, honey, allspice and thyme. Set aside for 10 mins.

2 Meanwhile, cover the sweet potato in boiling water and cook for 10 mins until tender. Drain and allow to steam-dry for a few mins, then mash with the chilli flakes, spring onions, salt and pepper.

3 Roast the pork for 20-25 mins until golden and cooked through. Leave to rest for 5 mins, then serve sliced, alongside the spicy mash and pour over the cooking juices.
